I wouldn't recommend using Pages for creating an ebook. There are tools built into the newest version of Adobe InDesign that does a smoking job at creating ebooks. There are several flavors of epub currently. Depends on which device you are planning to use as to what tools will take you there. This is a moving target at present. Tablet devices will change the game again and we are starting to see rich media opportunities via html5.
